WITHE TRIPE
BLACK PUDDING
Preparation
Cut the white tripe or black pudding into equal slices, not too thin and not too thick.
Let’s go outside
Start the TiGER FiRE by making a small fire of oak & beech. Make a pyramid shape. Gradually add larger blocks of wood to the pyramid.
Rub the baking tray with oil. Preferably use peanut oil.
If the fire in the TiGER FiRE burns well it takes about 20 to 30 minutes before the maximum cooking temperature is reached.
Briefly bake the slices of white tripe or black pudding on the TiGER FiRE, on both sides.
Serving suggestion
Place the baked slices of white tripe on a lace biscuit with cashew nuts and finish with a dot of honey mustard sauce. Do the same for the baked slices of black pudding, but finish with a dot of barbecue sauce.
