Preparation
Choose a piece of Côte à l'os carefully. Make sure it is not thicker than 4 cm.
Season the Côte à l'os with herbs according to your wishes and taste. Let it rest for a while.
Let’s go outside
Start the TiGER FiRE by making a small fire of oak & beech. Make a pyramid shape. Gradually add larger blocks of wood to the pyramid.
Rub the baking tray with oil. Preferably use peanut oil.
If the fire in the TiGER FiRE burns well it takes about 20 to 30 minutes before the maximum cooking temperature is reached.
First of all, we need to sear the Côte à l’os. Do this for both sides, about 2 to 3 minutes on each side. Place the grill grid in stainless steel or the HONEY grill grid above the fire when the flames are subdued and let the Côte à l'os cook slowly. The time for this depends on the thickness of the piece of meat.
Serving suggestion
Serve with fresh fries and a fresh salad.
